Lemon Rice

A frequently prepared recipe at home- it is simple to make with no special effort required for preparation (read no chopping), especially if there is some leftover rice. It tastes yummy too ;).

Ingredients:
  • 1½ cups Rice
  • 10-12 Curry leaves
  • 2 Red chillies (whole)
  • 2 tbsp Oil
  • Pinch of Asafoetida (Hing)
  • 1 tbsp Urad dal
  • 1 tbsp Chana dal
  • ½ cup Ground nuts
  • ¼ cup Cashew nuts
  • 1 tsp Mustard seeds
  • ½ tsp Turmeric powder
  • 4-5 tbsp Lemon juice

Method:
  1. Wash and soak rice in water for 30 minutes. Drain the water and cook the rice.
  2. Heat oil in a pan. Add hing, red chillies, udad dal and chana dal. Cook till the dal colour turns light brown.
  3. Add ground nuts, cashew nuts and mustard seeds. When mustard seeds crackle, add curry leaves and turmeric powder. Stir fry for a minute.
  4. Add cooked rice, salt and lemon juice. Mix well, cover and cook on low flame for 3-5 minutes.
  5. Serve hot.
