A frequently prepared recipe at home- it is simple to make with no special effort required for preparation (read no chopping), especially if there is some leftover rice. It tastes yummy too ;).

- 1½ cups Rice
- 10-12 Curry leaves
- 2 Red chillies (whole)
- 2 tbsp Oil
- Pinch of Asafoetida (Hing)
- 1 tbsp Urad dal
- 1 tbsp Chana dal
- ½ cup Ground nuts
- ¼ cup Cashew nuts
- 1 tsp Mustard seeds
- ½ tsp Turmeric powder
- 4-5 tbsp Lemon juice
Method:- Wash and soak rice in water for 30 minutes. Drain the water and cook the rice.
- Heat oil in a pan. Add hing, red chillies, udad dal and chana dal. Cook till the dal colour turns light brown.
- Add ground nuts, cashew nuts and mustard seeds. When mustard seeds crackle, add curry leaves and turmeric powder. Stir fry for a minute.
- Add cooked rice, salt and lemon juice. Mix well, cover and cook on low flame for 3-5 minutes.
- Serve hot.
